Hutspot: Dutch Recipe for Carrot, Onion and Potato

Honestly, growing up, this was not my favorite dish. I preferred dishes that were “meat forward” (although I didn’t know that term back then), rather than focus on vegetables. However, as a grown-up, I rather like it. All my American friends who have tried it have loved it and asked for this recipe!! 

Serve Hutspot with the Gehaktballen in jus recipe, or a smoked sausage

It is so easy to make in an Instant Pot, and serves many hungry mouths!

Hutspot: Dutch Recipe for Carrot, Onion and Potato

A humble, quintessential Dutch dish made with carrots, onions, and potatoes that is absolutely delicious and is easy to make in your Instant Pot! A favorite of all of our American friends who have tried this!

Ingredients

Hutspot

  • 500 g Carrot
  • 500 g Onion
  • 1 kg Potatoes (Russet)
  • 30 g Unsalted butter
  • Salt & Pepper

Instructions

  • Peel, and cut your potatoes into medium-sized pieces.
  • With a vegetable peeler, peel the carrots.
  • Using a food processor or box grater, grate the onions and carrots. Put them into the Instant Pot
  • Add the potatoes and 250ml (1 cup) of water.
  • Season with some salt & pepper.
  • Cook on high pressure for 12 minutes
  • Do a quick release.
  • Drain any liquid from the Instant Pot insert
  • Add the butter, and mash it all together.
  • Taste, and add seasoning if necessary.
