When I was growing up, this delicious tomato soup was one of my favorites. I always thought it was something my mom would spend hours in the kitchen for. When she shared her recipe with me, I was surprised to hear that she’d make this when she didn’t have a lot of time: it’s quick, delicious, and quite filling!
Chinese Tomatensoep: Tomato Soup inspired by Dutch Chinese Restaurants

Method
- Slice the leek in thin slices, and wash it thoroughly.
- Beat the egg, and fry it up in a skillet. It doesn't have to be browned, just enough to be cooked through.
- Slice the egg in thin strips (1cm / 0.5" wide)
- Add all the ingredients, except the leek and egg, to the pot, and mix to combine.
- Over medium-low heat, heat it up, but do not bring it to a boil.
- Add the egg and leek, and keep cooking it for a bit to warm the leek and egg. You want the leek to still have crunch, so don't cook it for too long.
I made this recipe but substituted meatballs. It was “Smaakelijk”. I just returned from The Netherlands and always my favourite was the tomato soup. Thank you for this recipe and insight.
