The cookies are buttery, crunchy, and delicious! Whenever we make these, we will also make Kniepertjes, which we’ll eat on December 31st.

NIeuwjaarsrolletjes are most popular in the North-East part of The Netherlands, and I didn’t grow up with them. I learned about them from someone I met at the Naval Academy, and I’ve been making them since!

He told me that making these is typically a family affair: everyone gets involved!!

Ingredients

Batter

  • 140 g Superfine sugar (caster sugar / witte basterdsuiker)
  • 115 ml Hot water
  • 60 g Unsalted Butter Room temperature
  • 140 g All-purpose Flour
  • 1 Egg
  • 0.5 tsp Vanilla Extract

Instructions

Making the batter

  • In a mixing bowl, whisk together hot water, butter, and sugar, until the butter and sugar are melted/dissolved.
  • Add flour to the bowl, and mix it through until it's fully combined.
  • Mix in the egg and vanilla extract until it's fully incorporated.
    Note The reason we add the egg after the flour, is so that the mixture is cool enough to no longer cook/curdle the egg.
  • You know the batter is the right consistency when the batter falls off your whish in a ribbon. If it's too thick, add a teaspoon of water. If it's too thin, add a teaspoon of flour.
  • Add the batter to a squeeze bottle.

Baking and rolling the nieuwjaarsrolletjes

  • Preheat your waffle cone iron. (On mine, it's the hottest setting), and put some non-stick baking spray on it.
  • Put a generous amount of batter in the center of the iron. The amount really depends on your waffle iron; don't overfill it, otherwise, it will overflow.
  • Close, and latch the lid. Cook until it's a nice golden brown.
  • Note: You need to do this when the waffle is still warm, you cannot roll it once it cools off.Lay the waffle on a folded over piece of paper towel, and roll it tightly around the handle of a wooden spoon. Let it cool off slightly, before removing it from the wooden spoon, otherwise, it will "unroll."
  • Repeat until all the batter is used up!

Filling the nieuwjaarsrolletjes

  • Once the rolletjes are completely cooled, they are traditionally filled with whipped cream.I personally like it with cinnamon-whipped cream, but anise-whipped cream is good too!
